A Pizza Moto Personal Size Pizza Straight Out of the Oven

Sure, pizza is perfect for on-the-go eating but did you know that it’s entirely possible to make wood-fired pizza from the back of a truck on the streets of NYC?  Pizza Moto, one such mobile unit, started out when Owner/Chef Dave Sclarow first tried anchoring a traditional brick and mortar oven onto a flatbed trailer towed behind his VW pickup truck.  Sclarow quickly discovered that transporting this delicately constructed oven over the city street’s jarring terrain reduced it to rubble within weeks.  After a major overhaul, it’s now outfitted with an oven made from double walled 12 gauge diamond plate steel anchored atop stone tiles.

Even though the oven’s construction is a compromise, its masonry hearth soaks up the heat just as effectively as the traditional design producing thin, crisp yet bubbly encrusted Neapolitan, Margarita, and Three-cheese personal size pies.  With just the right amount of char around the edges, Sclarow lightly drizzles olive oil over the light sourdough flavored crust, dots it with globs of fresh mozzarella, and then sparingly graces the surface with tangy sweet tomato sauce.  All that’s left to your discretion is dusting it with some fresh parm and/or hot red pepper flakes.
