Fresh Sugar Cane: The Main Ingredient of Leblon Cachaca

Courtesy of Leblon Cachaca…some great recipes to experiment with using this unique liquor from Brazil.  A wild, more authentic, and non-Europeanized version of Rum, Cachaca’s flavor is much less fiery and infinitely more flavorful than traditional Rum. The best taste comparison I can think is a good quality blanco Tequila:

2 oz Leblon Cachaca

3 Lime Wheels

3 Lemon Wheels

6 Blueberries

2 Teaspoons of Superfine Sugar (Or 1 oz. Simple Syrup)Cut lime into (3) 1/8″ wheels and cut lemon into (3) 1/8″ wheels and place into shaker. Add 2 teaspoons of superfine sugar, or 1 oz of simple syrup. Muddle fruit in shaker for 10-15 seconds, extracting juice from lemon and lime wheels. Add Leblon Cachaça. Fill rocks glass to the top with crushed ice. Add 6 blueberries. Shake or stir, mixingthoroughly. Garnish with lemon, lime, and blueberry combination.

King Carlos Caipirinha

2 oz. Leblon Cachaça

1/2 oz. Lime juice

Dash of Simple Syrup

1/2 cup chopped Watermelon

1 stem of Cilantro

1/2 small ChiliMuddle the chili, cilantro, watermelon and simple syrup. Add Leblon Cachaça, lime juice, ice and shake sharply. Strain over ice into a highball glass. Garnish with a stem of cilantro and two watermelon balls.

Chi- Town Consolation Caipirinha

2 oz Leblon Cachaça

6 blackberries

1 lime wedge

1 oz. of honey simple syrup (4 parts honey to one part hot water)

2 sprigs of mint

Place blackberries, lime wedge, and honey simple syrup into a shaker. Gently muddle for 10-15 seconds, extracting the juice from the blackberries and lime. Add Leblon Cachaça. Fill rocks glass to the top with crushed ice. Shake or stir well to thoroughly combine all ingredients. Garnish with a mint sprig.

2 oz Leblon Cachaça

1 oz. sake

2 oz. lychee puree

1/2 oz. lemon juice

1/2 oz. vanilla & lemongrass & chili

Small pieces of lemongrass & chili

Champagne – to top

Glass-HighballMuddle chili and lemongrass in a shaker. Shake with remaining ingredients except Champagne. Strain over ice into a highball glass. Top with Champagne and stir well. Garnish with lemongrass straws.
